When my oldest daughter was 4 she was an easy and great eater.  Her favorite food was SPINACH.  Jessica Seinfeld (Jerry’s wife) wrote a cookbook that was very popular at that time called, “Deceptively Delicious” about how to sneak vegetables into your kid’s food.  I thought, how dumb, just give your kids vegetables and they will eat them.

7 years later I get it.

Now, I put 2 cups of kale (or spinach) in the blender with the tomatoes before adding it to my chili.  No one notices, they love it!

INGREDIENTS (serves 4-6)

1 lb grass-fed ground beef

1⁄2 cup chopped onion

1 garlic clove, finely chopped

1 (28 ounce) can or boxed diced tomatoes

2 cups of spinach or kale

1 tablespoon chili powder

1 tablespoon ground chipotle chile

3⁄4 teaspoon ground cumin

1⁄4 teaspoon salt

1⁄4 teaspoon pepper

2 (16 ounce) can kidney beans, rinsed and drained

Raw cheddar cheese

DIRECTIONS

  1. Cook beef, onion and garlic in saucepan until beef is brown.
  2. Blend tomatoes and spinach.
  3. Stir in remaining ingredients except beans.
  4. Heat to boiling, reduce heat to low.
  5. Cover and simmer 1 hour, stirring occasionally.
  6. Stir in beans.
  7. Heat to boiling, reduce heat to low.
  8. Simmer uncovered about 10 minutes, stirring occasionally.
  9. Top with shredded raw cheddar cheese.
